I'm calling this granola "groovy" because, honestly, it just makes me feel good when I make it! Granola is literally one of my favorite foods and this recipe is a 100! Andddd, it doesn't have all the bad-for-you ingredients that store-bought granola has and is a third of the cost! You could double this recipe if you have a lot of mouths to feed and it would make a really big batch! We love it on top of plant-based yogurt topped with berries (nom!), as the base layer of our Acai bowls (which we are having on repeat with this NC summer heat!) or just in a bowl with some milk! I made a homemade, organic-soy based yogurt with the granola this time - I'll include the link to the YouTube video I followed to make that below. The yogurt calls for an Instant-pot which made it super easy. The fam loved it and I loved the flavor, but it was a little too runny for my taste. Ok, onwards and upward! Here is the granola recipe, it's totally grooooovy ;)
Ingredients:
5 cups organic rolled oats
1/2 tsp sea salt
1/3 cup coconut sugar
3 tsp vanilla
1/4 cup maple syrup
1/4 cup coconut oil (melted)
*optional add-ins: dried fruit (add this after you bake it) or nuts - I love chopped walnuts or pistachios, shredded coconut
Directions:
Mix everything in a big mixing bowl. Spread evenly on a piece of parchment paper, on a baking sheet. Bake at 325 degrees for 30 minutes. Stir once during baking time. Store in a glass jar for up to a month on your countertop! Enjoy!
