Healthy Blueberry Muffins and a Word on Hospitality

Ingredients:


1 3/4 cup organic whole wheat flour

1 tsp baking soda

1/2 tsp fine sea salt

1/2 tsp cinnamon

1/3 cup oil (coconut or EVOO)

2 flax eggs or regular eggs (depending on if you want these to be vegan or not)


*Note" 1 flax egg = 1 Tbsp ground flax + 2 Tbsp water mixed (must sit on counter for 10 minutes to thicken)


2 Tbsp Greek yogurt (can use cashew or coconut yogurt if trying to keep these vegan)

1/4 cup maple syrup

1/2 cup coconut sugar (+extra for sprinkling the muffin tops before baking)

2 tsp vanilla

1 cup frozen blueberries


Directions:

Mix dry ingredients in one bowl


Mix wet ingredients in another bowl


Combine the wet and dry ingredients and mix well


Stir in the berries


Grease muffin cups and spoon into muffin cups (about 1/2-3/4 full)


Sprinkle tops with coconut sugar


Bake at 400 degrees F for 16-18 minutes


Cool completely before serving


*I have found that a fork works the easiest for trying to get the muffins out of the cup once they have cooled. These muffins are delicious and the whole family will love them!


A word on hospitality


My new favorite hospitality "thing" I have been doing is inviting others over for Saturday breakfast (yes to the PJ's)! It's so laid back and easy and fun! Sometimes I get stressed at the idea of cooking a whole meal for other families. I was reminded recently through an online post that we shouldn't overcomplicate hospitality. (Amen, I needed that reminder!) Hospitality is not a show - I don't think many of us are actively thinking this but I can get caught acting this way. Hospitality is an attitude of the heart. It's not about the house being perfect, beautiful place settings and a leg of lamb in the oven! It can be scrambled eggs, muffins orange juice, and a spirit that says I want you here! What hospitality is really about is community - being together, knowing others and being known, mess and all (whether it's the house or ourselves). Hospitality is so much more our heart attitude surrounding others than it is a beautiful home and fancy meal. So go ahead, you have the green light to invite others over for a PJ breakfast, leftovers, or even better, ordering pizza in! Let's just practice being together and sharing our hearts, imperfections and all. That's hospitality!
