This recipe is a day late because we were out on the water all day yesterday for the 4th! This No- Cheese Mac and cheese is delish and a crowd pleaser! My whole extended just ate this for breakfast on our fam beach vacation! Ha! Good anytime of day!
Ingredients:
3 small potatoes (Yukon gold are best)
2 whole carrots
1/2 cup raw cashews
1/2 cup nutritional yeast
2 tsp salt
2 tsp garlic salt or powder
Juice of 1 lemon
2 cups of water (best if you use the water you boil the potatoes and carrots in)
Directions:
Boil potatoes and carrots until fork tender
Soak cashews for 10 minutes in water on the countertop
Throw all ingredients in a blender (including water from boiled carrots and and potatoes)
Pour over cooked noodles and enjoy!
This cheese sauce is also great as nacho dip on taco night! We also use it over broccoli for a broccoli-and-cheese remake! Store extra cheese sauce in a mason jar in the fridge and enjoy it all week!
