No Cheese Mac and Cheese!

This recipe is a day late because we were out on the water all day yesterday for the 4th! This No- Cheese Mac and cheese is delish and a crowd pleaser! My whole extended just ate this for breakfast on our fam beach vacation! Ha! Good anytime of day!



Ingredients:

3 small potatoes (Yukon gold are best)

2 whole carrots

1/2 cup raw cashews

1/2 cup nutritional yeast

2 tsp salt

2 tsp garlic salt or powder

Juice of 1 lemon

2 cups of water (best if you use the water you boil the potatoes and carrots in)



Directions:

  • Boil potatoes and carrots until fork tender

  • Soak cashews for 10 minutes in water on the countertop

  • Throw all ingredients in a blender (including water from boiled carrots and and potatoes)

  • Pour over cooked noodles and enjoy!


This cheese sauce is also great as nacho dip on taco night! We also use it over broccoli for a broccoli-and-cheese remake! Store extra cheese sauce in a mason jar in the fridge and enjoy it all week!
