I missed posting this recipe last week because my sweet Daddy was hospitalized after nearly suffering sudden cardiac arrest! He gave us such a scare after he became severely dehydrated and his heart rate went sky high and stayed high. His heart, which is one of the BIGGEST, most beautiful you’ll ever know, almost gave out due to muscle fatigue, it was working itself to almost death. Thankfully, after 4 days in the hospital and lots of fluids, he is home, regaining his strength, eating well again, and we are all so thankful!
So, I’m back in the recipe saddle! I plan to keep the recipes coming, and start back with some other variety type blog posts too! I’m excited! Stay tuned!
Ok, enough updates - let’s get to those oats!! But one more quick thing before we do. I just want to say, thank Y O U for being here. I really love this little corner and it means so much to me that you ✨are here, honestly. I hope this space is fun and encouraging to you!
Ok, about those oats Catherine…
Ingredients
1 glass mason jar
1 cup of organic oats
1/4 cup chia seeds
1/2 cup fresh or frozen blueberries
Juice of 1/2 lemon
1 tbsp maple syrup
2 cups plant milk (I use organic soy)
Put all ingredients in the mason jar with a tight-fitting lid and “shake it up baby now! Shake it up baby! Twist and shout” haha! What I’m trying to say is - Just shake it really well, aggressive even. Put the jar in the fridge for at least 8 hours. I usually make 2-3 of these on Sunday night to enjoy throughout the week. So easy! They are super filling and loaded with good nutrition and are a really easy grab-and-go!
