Pickled Red Onion Recipe

This is a light, summer recipe that you won't regret making! It's super nutritious and equally tasty! I've been making this on repeat.


Ingredients:

1 large red onion

1/2 cup apple cider vinegar

1 tablespoon coconut sugar (or maple syrup)

1.5 tsp sea salt

1 cup warm water





Slice the red onion super thin and place it inside of a large mason jar. Fill the jar with the remaining ingredients and give it a good shake to make sure everything gets adequately mixed. Done! Ha! Doesn't get much simpler or quicker than that!





Let it sit on your counter for a couple of hours before placing it in the fridge. It'll be good for a couple of weeks. You can put the onions on top of basically anything but my absolute favorite is placing it on top of avocado/greens-loaded crackers! I am including that recipe (if you wanna call it that - ha! - it's so easy) here too! I have eaten this for like 7 days straight, I'm obsessed!





All you need for this Nom snack is:

large crackers (I like the grains and seeds ones from Trader Joe's)

micro greens

a ripe avocado

hot sauce


Load your cracker with the ingredients above and top with pickled red onions and sea salt! Wowza!
