This little number was inspired by my recipe friend on Instagram Plantiful Kiki. I've been making this for years, but I love how she layers the rice roll wrappers and adds Swiss Chard as another layer of wrap support! It makes a giant veg burrito the size of my head!
It's nutrient-packed, I can almost feel my cells shouting, "thank you!" when I devour this! A heads up that it is also slightly more involved, but I really do think it is worth it! The whole process start to finish takes me about 15 minutes so it's not terrible but involves a decent amount of chopping.
Forgive the garden dirt under my nails ;)
I used matchstick carrots but you could julienne a whole carrot. And I use a peeler to make super-thin slices of the cucumber. Use whatever cutting/slicing/peeling method you want but the key is to make sure your veggies are sliced very thin.
Ingredients for the rice roll wrap:
Rice Roll Wrapper
(pic below - usually on the international isle at the store in the Asian food section)
Swiss Chard (with spine cut out - again, pic below)
cilantro
purple cabbage
cucumber
carrots
alfalfa sprouts
avocado
(I didn't have any when I made this but makes it that much better!)
Ingredients for the dressing:
lime juice (1 lime)
1/2 cup PB powder
(or you can use regular peanut butter - it just increases the calories significantly)
1/2 cup soy sauce (or coconut aminos)
1 tsp minced garlic
2 tbsp maple syrup
*If you are feeling lazy and don't want to make the sauce I use Trader Joe's sweet Chili sauce on these sometimes and it's a quick, delicious alternative - pic below).
Directions:
Wet your rice roll paper under the water faucet (no need to soak it - just run it under the water so that both sides get fully wet - then lay it down on your countertop - it will get sticky and flexible within 60 seconds. Do this with 3 rice roll wrappers making sure they overlap once you lay them down - one at the top, two at the bottom (Think of a Venn diagram)
De-spine your Swiss chard and lay it on top of your overlapped rice papers (this will serve as extra support - almost a second layer of wrapping)
Now is the fun part! Start layering your chopped veggies! Then roll the whole thing up like a giant burrito! Sprinkle with sesame seeds (if you have some!) Whisk together your dressing ingredients if you are making the homemade dressing. Dip and dig in! These are fiber-fueled and nutrient-dense! Vada, who is 7, even enjoys them!
One more thing! If you want to up the protein, I will often air-fry some firm tofu and add that in! Nom! Let me know if you make these and what you think!
